What I ate today (Vacations pt.2)

Hello people! So as I mentioned in my previous post, this is another what I ate today while vacationing in Agkistri island. It may not be the fanciest but this series go to show that you can vegan and eat a lot while being on a budget. Because being vegan is not expensive.I mean, the most cheap foods are vegan; pasta,rice,beans... unlike meat that can be quite pricey. But anyway, let's get into everything I ate that day in Agkistri,which was actually the last full day on the island.



  • 9:00 am 
Again, I had the same breakfast as all the other days. Granola with dried fruit, dates, flax seeds, a banana and oat milk.



  • 11:30 pm
I spent my morning by the pool and since I wasn't really that hungry I grabbed a peach as a snack. Peaches are definitely one of my favourite summer fruits and our fridge was full always full of them this summer! That's something I will miss during the winter time.


  • 2:30 pm
As I said previously, you can be vegan while on a low budget and this meal was an example of this. We just bought some pasta and a sauce, boil the pasta, throw the sauce on top and serve it with some bread! Simple and delicious! And definitely satisfying.

The sauce was the one I used in a previous what I ate today post, a fav of mine.

Later in the evening, I just snacked on some dates, which I failed to take a picture of., oops.

For dinner we went to the same restaurant where I had that sorbet the other day but this time I ordered a vegan burger which was served with a side salad. Obviously, this was amazing.

What I ate today (Vacations pt.1)


Hello people! I haven't posted in a while and that's why I was on vacations! I spend a week in Agkistri Island and then 4 days in Loutraki. During my time in Agkistri I thought I could take the opportunity of making a what i ate in a day post for you. Now, I couldn't decide which day to post and I thought I could make two separate posts showing you what I ate in Agkistri, so keep an eye on my blog for part two!


Let's go!

  • 9:00 am 

So everyday I started my morning with pretty much the same thing, since I had packed some ingredients with me for making breakfast during that week.
This consists of a bunch of things; granola, a mix of dried fruits, flax seeds, a chopped banana, some dates and oat milk. This was obviously delicious and gave me so much energy early in the morning!


  • 12:00 pm

Later on, we went to a beautiful beach where I share half a melon with my brother (obviously I ate more than him). I just love summer and its sweet, refreshing fruits!

  • 3:00 pm
When we left the beach, we decided to eat in one of the tavern, and we went to a traditional tavern that was serving mainly fish. So, I ordered the only things that were vegan, potato fries and a Greek salad. Not exciting at all but it was tasty and very satisfying. Mediocre looks, good taste.

Then we went back to our hotel and where tiredness knocked me out and I had to take a nap. 
  • 7:00 pm 
I woke up from the nap feeling quite hungry and since it was almost dinner time, I ate the other half of the melon with some dates. Super satisfying and delicious.
  • 9:30 pm
A couple of hours later, we went to cafe/restaurant and since I wasn't feeling that hungry, I had some strawberry sorbet. Gotta love sorbets.

When we got back to our hotel, we just snacked on some grapes and that was it! 

As you can see, a lot of my meals was basically fruit which is perfect during the summer. And even if summer is almost over, don't be afraid to go and buy all those beautiful fruits this season has to offer you! You will feel so good eating all that goodness! See you in the next post, bye! x

2 green breakfast ideas


Hello people! Breakfast is the most important meal of the day, you've heard that too many times. And although fruits are the best option for early in the day, it's good to throw some greens now and then. In this post, I'm going to show two amazing breakfast ideas that include something green, because green can make everything healthy! Except for the green m&m's, don't have these for breakfast.


Breakfast No 1
Avocado toast

One of the easiest, quickest and tastiest breakfast (or any other meal tbh) you can make. Avocado has become really popular and why wouldn't it? It contains a wide variety of nutrients, including 20 different vitamins and minerals, and yes it is a high fat food but it contains naturally good fat food which your body needs. Also eating avocados can lower cholesterol and triglyceride levels and some studied have shown that it can even prevent cancer. 
But anyways, the way I like to incorporate avocado into my diet is usually by spreading it on a toast, put some tomato slices on top and maybe some cucumber or spinach. In some cases I will drizzled some soy sauce on top, as I did now.
If don't know how an avocado toast tastes like, I highly encourage you to make this, you can thank me later. Oh, and always use ripe avocados, I've been there.























Breakfast No 2
Green smoothie


So, this is something you may be familiar with. If not, don't be appalled. Throwing some greens into your regular smoothie can be suprisingly tasty and incredibly nutritious. And spinach is the way to go! Spinach is one of the most healthy foods in the planet, and among cancer-fighting fruits and veggies, spinach is one of the most effective. It's also low in fat and even lower in cholesterol, and high in protein, fiber, vitamins A, C, E and K, calcium, iron..the list goes on and on!
For my smoothie I used 2 handfull of spinach, one cucumber, 1 peach, 1 banana and a splash of soy milk. Some other fruit options are pinapple, mango, kiwi, grapes, whatever your heart desires!
















Just mix your ingredients in a blender and you have yourself an amazing green smoothie loaded with goodness and nutrition. And trust me, you won't even taste the spinach, because the banana will sweeten it! This works as a good post-workout meal as well.

Refreshing watermelon juice

Hello people! Yesterday, August 3rd was actually Watermelon Day and I think everyone agrees with me when I say that watermelon is one of the best fruits! Fortunately, here in Greece there is always a watermelon in our fridge during summer. So, of course I had to make something in honor of this amazing fruit. And here it is, a refreshing, summery watermelon juice. Plus, it's a great way to use leftover watermelon so that it won't go bad. The only essential ingredient you need is,obviously, watermelon but I switched it up a bit and added a couple more things.


You will need:
(for 2 servings)


  • 2 cups watermelon (or more depending on how much juice you want)
  • the juice of 1 lemon
  • a handful of mint leaves






























Now, all you have to do is put those ingredients in a blender and blend for 1-2 minutes.






























That's it!You have yourself a hydrating juice, which tastes pretty bomb too.




What I ate today #2


Hello and welcome to another what I eat in a day! I'm planning on making a lot of this kind of posts because I think it's a great way to get inspiration for your everyday meals and you can also get a glimpse of my day and my food choices. Let's get started!


  • 10:00 am


So for breakfast I had a bowl of cereal, as per usual. I put this brand of cereal (which is soo good btw) in a bowl with some oats, one chopped banana and soy milk. Simple but delicious! And it gave me the energy I would need at the gym later on.



  • 1:30 pm

By the time I returned from the gym, it was lunch time so I made one of the easiest and quickest meals. Pasta with tomato sauce! I drizzled some nutritional yeast on top, obviously and I had two of these bowls to feel satisfied.





This was the tomato sauce I always buy. I only use it when I'm in a rush though or when there's no tomatoes left, since I prefer preparing my own, homemade sauce.


  • 5:00 pm

For a snack, I went for something simple. I recently bought these granola bars and I wish I could describe to you how good they are! And I was really suprised to find out that they were vegan. So, I had this granola bar and a banana as well.


  • 8:30 pm
Dinner time! For this meal, I kind of improvised since we didn't have a lot of things is my kitchen. I was going to make a sandwich but there was no bread left, so I made these "lettuce boats". It's basically two big leaves of lettuce with tomato, mushrooms, corn and dressing. Now, usually my dinner is bigger but I wasn't really hungry at that day and wanted something lighter.

Vanilla and Chocolate Cake | VEGAN


So I've never made a cake before and even though I'm more of a brownie person, I really wanted to make a tasty vegan cake. I came across a lot of recipes, made some personal alterations and here we are! I can proudly say that this was a success! This cake is perfect for a birthday party or any other special ocassion. It's incredibly easy and don't be afraid to give it a try even if you're not quite the baker. My non-vegan family absolutely loved it, which goes to show that vegan desserts can be just as delicious as the non-vegan ones!

Ingredients

     For the cake

  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 1/3 non-dairy milk
  • 2 medium ripe bananas 
  • 1 tbsp apple cider vinegar
  • 2 tsp baking soda
  • 2  1/2  tbsp cocoa powder
  • extra 2 tbsp flour
  • 1 container of vanilla powder (or 1 tbsp vanilla extract)


      For the icing

  • 2 tbsp non-dairy milk
  • 1 tbsp cocoa powder
  • 1 tbsp vegan butter
  • 1 vanilla
  • 2 cups icing sugar















Instructions 



In a large bowl mix the flour (minus the 2 tbsp), the vanilla, the baking soda and the sugar.



















Mash up the two bananas and add them to the mixture. Add the milk and the vinegar as well and mix well.





















Now, separate the mixture into two bowls. I had about 1/3 of the mixture in the second bowl, in which you're going to add the 2 1/2 tbsp of cocoa powder. Now add 2 tbsp flour in the vanilla mixture and mix both of them well. This is what you'll want to end up with.

















It's baking time! Pour each mixture into two 8 inch pans lined with parchment paper. Bake them for 20-22 minutes, depending on your oven.

Once they're done, leave them to cool for as long as possible. (I left mine for half an hour but I recommend you leaving them longer than that.) 

The vanilla cake should be thicker that the chocolate one, because you're going to cut it in half.

To make the icing, just mix all of the ingredient listed above, just make sure to graduall add the icing sugar until you have the desired consistency.

Now it's time to resemble the cake. First take half of the vanilla cake that you just cut and spread the top of it with the icing.


















Now lay the chocolate cake on top and spread some icing on it too.















Lastly, add the second part of the vanilla cake on top and spread the rest of the icing. I also cut the edges of the cake, just for presentation points. Of course, you can be creative with the toppings but I decided to keep it simple and chocolatey!

And voila, the cake is ready to be served!

What I ate today! #1




Hello! So one of my favourite kind of videos to watch on youtube is "what i ate today" videos because they help me get inspired and creative with my everyday food choices.And  I tought I would do the same things here in my blog! Basically I will start a series of posts showing you everything I ate on a particular day. And so this post number one.

I'm not going to show the full recipes though so if you're interested in knowing the instruction of any of these meals, just let me know. Lastly, sorry for the quality of the photos, I had to use my phone so it's not the usual quality of the photos on my blog.



First things first, I always start my day with a full glass of water and sometimes I also add some lemon slices as well as lemon juice.






























Then, it's breakfast time! I always include fruit in my breakfast since that's what will give me the energy I need to start my day. The most usual breakfast is the following- granola and oats, strawberries, banana, dates and of course some almond milk. I also topped it with some chia seeds.





Then for luch I made a pretty quick meal.I put some potatoes in the oven, half seasoned with paprika and the other half with curry powder, and added some ketchup and barbeque sacuce (vegan ironically) as dippings. I also made a big bowl of salad with spinach, cucumber, tomatoes, tofu and dressing. This was soo good and filling!




Then, I went to the gym for about an hour and a half and came back home at around 5:30 pm and had this amazing raw bar as a snack.




The ingredients in this were really surprising honesly! It was made with just dates and cashews, and as I always say, the less ingredients the better because no one wantes an over-processed snack.



Then since I wasn't home until 9 pm, I was really hungry. I decided to make quacamole with some tortilla chips because we would watch a movie and of course I had to snack on something.But I also had to eat something quite filling since I hadn't eat that much all evening. I don't think I have to decribe how good that was!




AAND, THAT'S IT FOR TODAY! Now, I usually eat a lot more but I keep my meals healthy and cruelty-free. I will keep you updated with other "what I ate today" posts

Vegan Nutella!

One of my favorite things as a non-vegan was definitely nutella! I mean, who doesn't love a warm slice of bread with nutella on top? But I have discovered a vegan, healthiest version of this delicious chocolate spread that honestly tastes better than the original! So,take a piece of paper and write down this amazing,easy recipe beacause trust me- you need to try this!


    

 ingredients

  • 1 cup cocoa powder
  • 1 cup powdered sugar
  • 1 cup hazelnuts
  • 1 tsp vanilla powder (or 2 tsp vanilla extract)
  • 1/4 cup vegetable oil
  • a little bit of salt


   






instructions

  • Put the hazelnuts and the vegetable oil in a blender or food processor and blend for about 5 minutes until it has a liquid consistancy. It's really to important blend them for a long time in order for the nutella to be liquidy enough.
  • Add the rest of the ingredients and blend until all of the ingredients are well mixed and the nutella has the desired consistancy.
Your nutella is ready!
